The Fattoria Rossi (Farm) lays in the Matilde di Canossa native area, at the slopes of the Reggio Emilia hills, the craddle of Parmigiano Reggiano cheese. It is a family farm that for many generations has been working to produce that cheese by caring about every single phase: from the birth of cows, to production of milk up to the transformation and sale. “CLOSED PROCEDURE” products
The main aim of the Fattoria Rossi (Farm) is to point at quality and not quantity and that is the reason why you can find handicraft products by Fattoria Rossi’s transmitted generation by generation. Besides of a very good Parmigiano Reggiano cheese, differently aged, there you can find even local salami, fresh and aged cheeses, honey, marmalades, home-made sauces still nowadays, wines coming from our vineyards, balsamic vinegar. All the typical products of those matildic lands are made on our own or produced by agricultural farms selected by us, about growing and greeding.
The animals bear and grow in the farm in wide open spaces and in full respect of their life rhythms and their wealth. They are nourished with fodders and cereals coming from organic growings with an A.I.A.B. certification (Italian Association of Organic Agriculture); the kind of constant alimentation allow to obtain milk that once it has been processed it provides a cheese product that maintains the same features all over the year. ...from the production, to sale...
The milk comes from the milking of about 100 heads of cattle breed twice a day. The heads come to provide with such a quantity of milk that you can produce about 6 cheeses a day. To obtain a cheese of about 38 kg you need about 6 quintals of milk. The milk milked is brought to the “toll” and there it is worked with handicraft methods still nowadays (ISO 9001-2000) and it is “cared” for 2 years long during the aging. In order to better exalt the quality of the products the farm cares personally even the phases of packaging. The cutting is made by hand and the product is vacuum-sealed at cold temperature not to suffer variations of temperature to the product. The result of the whole that pay you for the fatigue spent is the Parmigiano Reggiano Cheese by the Fattoria Rossi that distinguishes itself for its white dough an the sweet and unmistakable taste in your mouth.
