For ages the family of Orazio Nencioni has her hut in Piazza del Mercato Nuovo, best known as Porcellino (Small pork) market.
That is for the presence of a historical statue made of bronze and with the shape of a sitting wild boar.
Inside the porch, behind the statue you can find the permanent market of leathers and souvenirs. Just looking at the statue, having the Ponte Vecchio on your left,
you can notice a chariot that is equipped to cook an excellent Lampredotto. The Lampredotto is the 4th stomach of the cow.
It is a kind of tripe.
It is boiled along with vegetables (carrot, onion and white chicory) and then it is cut in small pieces.
The sandwhich (a thick rosetta bread) is cut and wet in the cooking broth.
You can taste it with salt and pepper or green sauce (parsley, salt and oil) or hot pepper sauce.
Orazio is waiting for you every day and in winter even in the week-ends. Besides of Lampredotto he has even salami and every kind of beverage.
