The Street food is a culture that has to be promoted by the right project that can arrange it in a market as we have always known and enjoyed it. The best cheese cannot be made in aseptic conditions as much as the Street Food cannot be set aside the street and the social living where it was born. Thus, even though the Association “Streetfood” represents the ancient habits by recovering disappeared foods or on the way to extinction they want to keep on working by different paths but all referring to common subjects: a sane and sustainable alternative to socialization, a mean to be entrepreneurs and to communicate to young people in a young way, by the intention to be part of a system with Italian and foreign lands by involving in their projects either the organizations or the institutions or even the associations that share their “mission” generation by generation. In the cycle of life of an individual (6-19 years old) there are many moments where criticisms bear out during his food education: at breakfast time, at snack time and school canteen, as he goes out of school and the nutrition inside the four home walls. Thus, up to now the most traditional snacks have disappeared (such as bread with “water, wine and sugar” or “bread and anchovies” or bread with extra virgin olive oil).
