The pesca tardiva (late-harvested Peach) from Leonforte is called even the Settembrina for it is picked up after its maturation on the branch of its tree; it is grown in Leonforte and in the lands of near communes upon surface of about 200 hectares.
The not excessive extension is one of the main features of its production. The fundamental peculiarity of the Peach from Leonforte is the sacking of single fruits on the tree, starting since the half of june. By that practice you avoid to intervene with antiparasitic products.
The Peach from Leonforte is already known and researched in the whole Italy. Every year, on the first week of october, Leonforte celebrates the Peach feast and other typical products.
Recipe
Apple Pie with peach confit
Instead of short pastry you are suggested to use a base of brisée.
Ingredients
150 g flour, 75 g of butter and 35-40 g of milk and water
Procedure:
Divide the mix in two parts and lay it in very thin leaves.
Cover a pan with one leaf of pastry and a layer of Leonforte peach confit over it along with one Golden apple cut in dices.
Cover it with the second leaf, seal the borders and practice some cuts on the surface.. Put it in the oven for about half an hour until the pie becomes golden coloured. As it get cold after leaving it off the oven, spread abundant sugar over it.
