"BRAVE" WINE
Ever since 500 before Christ in Metauro River Valley a vine was diffused and differently called: Bianchello or Greco Bianchello or Biancame. Tacito tells that the juice of that wine was the main cause of the defeca of Asdrubale in the famous struggle of Metauro. You could deduce that was the wine to save a potential conquest of Roma by the Carthaginian but we do not dare to state that.
Nevertheless, apart from the historical and anecdotical news, the fact remains that nowadays the Bianchello is living a happy season for the fame that it deserves as a very pleasant fulfilling of meals based on fish. Nowadays the Bianchello is even served as an appetizer.
It is produced in the river basin of the Metauro river within the province of Pesaro-Urbino. The slopes exposed to South and South-West down to the plain and at the foot of a hill that go down to the sea by the Appennini buttresses are the most suitable for growing that vine. 18 Communes are included in the DOC certification.
The “Bianchello”, “Biancame” or “Greco i Bianchello” are names and synonymous most frequently used to show the vine from which the hmonimous wine comes from. The production can be made with Malvasia Toscana grapevines up to a maximum of 5%. FEATURES
LOOK: Pale yellow, not too charged, with green nuances. The freshness (acidity) and vivacity (carbon dioxide) of the first period openly stress on the transparence and on reflections.
PERFUME: Slender and delicate, rather persistent. It reminds you of the fresh fruit and spring flowers such as peach tree and whitethorn.
Dry taste, very fresh, harmonious, pleasant and very delicate alcoholic perception. It shows a total minimum alcoholic rate of 11,5% vol.
A total acidity included within 5,5 and 8 ‰.
A dry extraction included within 16 and 24 ‰.
If it is drunk as young, within the first year, it express at its best its freshness and fragrance. It supports rather well, according to years and selections, even a modest aging (1-2 years). In that case the wine shows off even its sapidity and maturity. A thin glass, uncoloured and slim gets the wine vivid clearness stronger and fully powers the thin freshness and the smells of fruit. The glass, if it’s half filled up, allows you to get the richness of humours. It is an excellent and stimulating appetizer at 6°-7° C. With the meal you have to serve it at 9°-10° C.
Matches with the local gastronomy
It is a suitable wine for young people: vivacious and healthy. It marries well with muscles, shellfish, and fish – alive or in delicate sea cooking. It exists a certain harmony between some fish menus and the vividness of Bianchello wine. The nuances between pale yellow and green, the delicate body that turns by the morbid impact to delicate one with very fresh and net stimulations, exalt the taste and the fragrance containing sodium chloride and iodide of the catch alive. The matching with the hake, the Dab, the Melù an so on…, boiled or passed on the charcoal, just dressed with local Extra Virgin Olive Oil (Cartoceto). It goes well with simple dishes of white meats – chicken, rabbit, turkey – with soups, with rice or pasta if they are elicately dressed.
